cherry cobbler muffins

Here’s a simple recipe for cherry cobbler muffins:

Ingredients:

  • 1 and 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups fresh or frozen cherries, pitted and chopped

For the cobbler topping:

  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter, cold and cut into small pieces

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix together the melted butter, buttermilk, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the chopped cherries until evenly distributed throughout the batter.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. In a small bowl, combine the flour and sugar for the cobbler topping. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  8. Sprinkle the cobbler topping evenly over the muffin batter in the cups.
  9. Bake in the preheated oven for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  10. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  11. Serve the cherry cobbler muffins warm or at room temperature. Enjoy!

These muffins are perfect for breakfast, brunch, or as a sweet treat any time of day. Feel free to customize the recipe by adding nuts or spices like cinnamon or nutmeg to suit your taste preferences.
