Cherry cheesecake lush layers sound like a delightful treat! Here’s a simple recipe you can try:

Ingredients:

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Cheesecake Layer:

  • 16 oz (2 packages) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, whipped

For the Cherry Layer:

  • 1 can (21 oz) cherry pie filling

Instructions:

1. Prepare the Crust:

  1. In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
  2. Press the mixture into the bottom of a 9×13 inch baking dish to form an even layer. You can use the back of a spoon or a measuring cup to press it firmly.
  3. Place the baking dish in the refrigerator while you prepare the next layer.

2. Prepare the Cheesecake Layer:

  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Add powdered sugar and vanilla extract. Beat until well combined and smooth.
  3. In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  5. Spread the cheesecake mixture evenly over the chilled graham cracker crust.

3. Add the Cherry Layer:

  1. Spoon the cherry pie filling over the top of the cheesecake layer, spreading it out evenly.

4. Chill and Serve:

  1. Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or until set.
  2. Once set, slice into squares and serve chilled.
