CHERRY BARS FOR A CROWD

Here’s a recipe for Cherry Bars that is perfect for serving a crowd. This recipe makes a large batch, suitable for a party or gathering.

Cherry Bars Recipe

Ingredients:

  • For the Bars:
    • 1 cup unsalted butter, softened
    • 2 cups granulated sugar
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon almond extract
    • 4 large eggs
    • 3 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 (21-ounce) can cherry pie filling
  • For the Glaze:
    • 1 cup powdered sugar
    • 1/2 teaspoon vanilla extract
    • 1/2 teaspoon almond extract
    • 2-3 tablespoons milk

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 15×10-inch jelly roll pan.
  2. Prepare the Batter:
    • In a large bowl, cream together the butter and granulated sugar until light and fluffy.
    • Beat in the eggs one at a time, then stir in the vanilla and almond extracts.
    • In a separate bowl, whisk together the flour, baking powder, and salt.
    • Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  3. Assemble the Bars:
    • Spread about 2/3 of the batter into the prepared pan.
    • Spoon the cherry pie filling evenly over the batter.
    • Drop the remaining batter by teaspoonfuls over the cherry pie filling. It doesn’t need to cover completely; the cherry filling should peek through.
  4. Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the top is lightly golden. Let the bars cool completely in the pan on a wire rack.
  5. Prepare the Glaze:
    • In a small bowl, whisk together the powdered sugar, vanilla extract, almond extract, and 2 tablespoons of milk. Add more milk if needed to reach a drizzling consistency.
  6. Glaze the Bars: Drizzle the glaze over the cooled bars. Allow the glaze to set before cutting into bars.
  7. Serve: Cut into squares or rectangles and serve.

These cherry bars are easy to make and perfect for serving a large group. Enjoy!
