Cheesy Keto Garlic Bread

Sure, here’s a recipe for cheesy keto garlic bread that you can enjoy while following a ketogenic diet:

Ingredients:

For the bread:

  • 2 cups shredded mozzarella cheese
  • 1 cup almond flour
  • 2 tablespoons cream cheese
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • Pinch of salt

For the garlic butter topping:

  • 4 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • Salt, to taste

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until the cheeses are melted and well combined.
  3. In another bowl, whisk together the almond flour, baking powder, garlic powder, dried oregano, dried parsley, and a pinch of salt.
  4. Beat the eggs in a separate bowl and then add them to the almond flour mixture. Mix until a dough forms.
  5. Gradually add the melted cheese mixture to the dough, kneading with your hands until everything is well combined and you have a smooth dough.
  6. Place the dough on the prepared baking sheet and shape it into a rectangular or oval shape, about 1/2 inch thick.
  7. Bake the bread in the preheated oven for about 12-15 minutes, or until it’s golden brown and cooked through.
  8. While the bread is baking, prepare the garlic butter topping. In a small bowl, mix together the melted butter, minced garlic, chopped parsley, and a pinch of salt.
  9. Once the bread is done baking, remove it from the oven and brush the garlic butter mixture over the top.
  10. Turn on the broiler and place the bread back in the oven for 1-2 minutes, or until the top is golden and slightly crispy.
  11. Remove from the oven and let the cheesy keto garlic bread cool for a few minutes before slicing and serving.
