cheesy zucchini muffins

Cheesy zucchini muffins are a delicious and savory treat that can be enjoyed as a snack, for breakfast, or as a side dish. Here’s a simple recipe to make them:

Ingredients:

  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 cup shredded cheddar cheese
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder (optional)
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1/4 cup plain Greek yogurt or sour cream
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 tablespoons chopped fresh chives or parsley (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
  2. Prepare the zucchini: Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. Set aside.
  3. Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, salt, garlic powder (if using), and black pepper.
  4. Mix wet ingredients: In a separate bowl, beat the eggs, then add the milk, vegetable oil, and Greek yogurt (or sour cream). Mix until well combined.
  5. Combine wet and dry ingredients: Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  6. Add zucchini and cheese: Gently fold in the grated zucchini and shredded cheddar cheese. If using Parmesan cheese and fresh herbs, fold them in as well.
  7. Fill the muffin tin: Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  8. Bake: Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  9. Cool: Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Tips:

  • Make sure to squeeze out as much moisture as possible from the grated zucchini to avoid soggy muffins.
  • You can substitute the cheddar cheese with any other type of cheese you prefer.
  • For extra flavor, consider adding some chopped green onions or a pinch of red pepper flakes.

Enjoy your cheesy zucchini muffins warm or at room temperature!
