Here’s a recipe for a Cheesy Tater Tot Breakfast Casserole that’s perfect for breakfast or brunch:

Ingredients:

  • 1 bag (about 28 oz) of frozen tater tots
  • 1 lb breakfast sausage (optional: turkey sausage for lighter version)
  • 1 medium onion, diced
  • 1 bell pepper, diced (optional)
  • 1 ½ cups shredded cheddar cheese (or more for extra cheesiness)
  • 8 large eggs
  • 1 cup milk (whole or 2%)
  • Salt and pepper to taste
  • ½ tsp garlic powder (optional)
  • ½ tsp onion powder (optional)
  • 1 tsp dried parsley (optional)
  • Freshly chopped green onions or herbs for garnish (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it up as it cooks. Add the diced onion and bell pepper (if using), cooking for another 3-4 minutes until softened. Remove from heat and set aside.
  3. Assemble the casserole:
    • In a greased 9×13-inch baking dish, layer the frozen tater tots evenly on the bottom.
    • Spread the cooked sausage and vegetable mixture evenly on top of the tater tots.
    • Sprinkle 1 ½ cups of shredded cheddar cheese on top of the sausage mixture.
  4. Prepare the egg mixture:
    • In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, onion powder, and dried parsley (if using).
    • Pour the egg mixture evenly over the casserole, making sure everything is coated.
  5. Bake the casserole: Cover the dish with foil and bake for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the casserole is set and golden brown on top.
  6. Garnish and serve: Allow the casserole to cool for a few minutes before serving. Optionally, garnish with freshly chopped green onions or herbs.
