Cheesy Stuffed Meatloaf Bites Recipe
Ingredients
For the Meatloaf Mixture:
- 1 lb ground beef (80/20 mix is ideal)
- 1/2 lb ground pork
- 1/2 cup bread crumbs
- 1/4 cup milk
- 1/4 cup grated Parmesan cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the Filling:
- 4 oz mozzarella cheese, cut into small cubes (about 1/2 inch)
For the Glaze:
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare the Meatloaf Mixture:
- In a large bowl, combine the ground beef, ground pork, bread crumbs, milk, Parmesan cheese, chopped onion, minced garlic, egg, ketchup, Worcestershire sauce, Italian seasoning, salt, and pepper.
- Mix everything together until well combined. Be careful not to overmix, as this can make the meatloaf tough.
- Form the Meatloaf Bites:
- Take a small amount of the meat mixture (about 2 tablespoons) and flatten it in the palm of your hand.
- Place a cube of mozzarella cheese in the center and wrap the meat mixture around it, forming a small ball. Ensure the cheese is completely enclosed.
- Place the meatloaf bite on the prepared baking sheet.
- Repeat with the remaining meat mixture and cheese cubes.
- Prepare the Glaze:
- In a small bowl, mix together the ketchup, brown sugar, and Dijon mustard until well combined.
- Bake:
- Brush each meatloaf bite with the glaze.
- Bake in the preheated oven for 20-25 minutes, or until the meat is cooked through and the internal temperature reaches 160°F (71°C).
- If desired, brush with additional glaze halfway through the baking time.
- Serve:
- Let the meatloaf bites cool for a few minutes before serving.
- Serve warm, with additional ketchup or your favorite dipping sauce if desired.
