Cheesy Potato Bake

Here’s a simple and delicious Cheesy Potato Bake recipe:

Ingredients:

  • 6 medium potatoes, thinly sliced
  • 1 medium onion, finely chopped
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup mozzarella cheese
  • 1 cup heavy cream
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Layer the Potatoes:
    • Spread half of the sliced potatoes evenly in the dish.
    • Top with half of the chopped onion, 1 cup of cheddar cheese, salt, and pepper.
    • Repeat with the remaining potatoes and onions.
  3. Make the Cheese Sauce:
    • In a small saucepan, melt the butter over medium heat.
    • Add the minced garlic and cook for 1 minute until fragrant.
    • Pour in the heavy cream, stir in the paprika, and cook for 2-3 minutes until slightly thickened.
    • Stir in 1 cup of cheddar and mozzarella until melted and smooth.
  4. Assemble:
    • Pour the cheese sauce evenly over the potato layers in the dish.
  5. Bake:
    • Cover with foil and bake for 45 minutes.
    • Remove foil, sprinkle remaining cheddar cheese on top, and bake uncovered for an additional 15-20 minutes, or until potatoes are tender and golden.
  6. Garnish & Serve:
    • Let it cool for a few minutes, then sprinkle with fresh parsley.
