Here’s a delicious recipe for cheesy keto garlic bread that you can make using almond flour or coconut flour as a low-carb alternative to traditional bread. This recipe uses a base of fathead dough, which is a popular choice for keto-friendly bread substitutes.

Ingredients:

For the Dough:

  • 1 1/2 cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 1/2 cups almond flour or coconut flour
  • 2 tsp baking powder
  • 2 large eggs
  • 1/2 tsp garlic powder
  • 1/4 tsp salt

For the Garlic Butter:

  • 3 cloves garlic, minced
  • 3 tbsp unsalted butter, melted
  • 2 tbsp fresh parsley, chopped (optional)
  • Salt and pepper, to taste

For the Cheese Topping:

  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried oregano (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Heat it in the microwave in 30-second intervals, stirring in between until the cheese is completely melted and well combined. Be careful not to overheat.
  3. In a separate bowl, mix together the almond flour or coconut flour, baking powder, garlic powder, and salt.
  4. Add the dry mixture to the melted cheese mixture and stir until it forms a dough-like consistency.
  5. Beat the eggs in a small bowl and then add them to the dough, mixing until fully incorporated.
  6. Place the dough between two sheets of parchment paper and roll it out into a rectangular shape, approximately 1/2-inch thick.
  7. Remove the top layer of parchment paper and transfer the dough onto a baking sheet.
  8. In a small bowl, combine the minced garlic, melted butter, chopped parsley (if using), salt, and pepper. Brush this garlic butter mixture evenly over the dough.
  9. Sprinkle the shredded mozzarella cheese, grated Parmesan cheese, and dried oregano (if using) evenly over the dough.
  10. Bake in the preheated oven for about 12-15 minutes, or until the cheese is bubbly and the edges of the dough are golden brown.
  11. Remove the cheesy keto garlic bread from the oven and let it cool for a few minutes.
  12. Slice it into pieces and serve it warm as a delicious keto-friendly garlic bread option.
