🧀 Cheesy Chicken & Broccoli Stuffed Shells

Servings: 4-6

Cook Time: 30 minutes


🧂 Ingredients:

  • 20-24 jumbo pasta shells

  • 2 cups cooked chicken, shredded (rotisserie works great!)

  • 2 cups broccoli, steamed and finely chopped

  • 1 ½ cups ricotta cheese

  • 1 ½ cups shredded mozzarella cheese, divided

  • ½ cup grated Parmesan cheese

  • 1 egg

  • 2 cloves garlic, minced

  • 1 tsp Italian seasoning

  • Salt & pepper, to taste

  • 2 cups Alfredo sauce (store-bought or homemade)

  • Optional garnish: extra Parmesan, chopped parsley


🔪 Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  2. Cook the pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

  3. Mix the filling:
    In a large bowl, combine the shredded chicken, chopped broccoli, ricotta cheese, 1 cup of mozzarella, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Stir until everything’s well combined.

  4. Stuff the shells:
    Spoon the chicken-broccoli mixture into each shell and place them in the baking dish.

  5. Pour Alfredo sauce evenly over the stuffed shells.

  6. Top with remaining mozzarella and a sprinkle of extra Parmesan if desired.

  7. Bake uncovered for 25–30 minutes, or until the cheese is bubbly and golden.

  8. Garnish with chopped parsley and serve hot!


🔁 Optional Twists:

  • Add a little red pepper flake for heat.

  • Swap Alfredo for a cheddar cheese sauce if you want it extra cheesy.

  • Use cauliflower instead of broccoli for a low-carb vibe.
