Here’s a delicious recipe for Cheesy Chicken and Peppers Bake:

Cheesy Chicken and Peppers Bake

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 bell peppers (any color), sliced
  • 1 onion, sliced
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 cup marinara sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare Chicken:
    • Season the chicken breasts with salt, pepper, oregano, and basil on both sides.
  3. Sauté Vegetables:
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the sliced bell peppers, onion, and minced garlic.
    • Sauté until the vegetables are tender, about 5-7 minutes. Remove from heat and set aside.
  4. Assemble the Bake:
    • In a large baking dish, spread a thin layer of marinara sauce on the bottom.
    • Place the chicken breasts on top of the sauce.
    • Spoon the sautéed peppers and onions over the chicken breasts.
    • Pour the remaining marinara sauce over the vegetables and chicken.
  5. Add Cheese:
    • Sprinkle the shredded mozzarella and cheddar cheese evenly over the top.
  6. Bake:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and the chicken is cooked through (internal temperature should reach 165°F/74°C).
  7. Garnish and Serve:
    • Remove from the oven and let it rest for a few minutes.
    • Garnish with chopped fresh parsley before serving.
  8. Serve:
    • Serve the cheesy chicken and peppers bake with your choice of sides like rice, pasta, or a fresh salad.
