Here’s a recipe for Cheesy Buffalo Chicken Lasagna with Ranch Drizzle! This combines the bold flavors of buffalo chicken with the comfort of lasagna, finished off with a cool ranch drizzle. It’s a perfect blend of spicy and creamy!

Ingredients:

For the Buffalo Chicken:

  • 2 cups cooked chicken, shredded (rotisserie chicken works well)
  • 1/2 cup buffalo sauce (adjust to your preferred heat level)
  • 1/4 cup cream cheese, softened

For the Lasagna:

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

For the Ranch Drizzle:

  • 1/2 cup ranch dressing
  • 2 tablespoons buffalo sauce (for drizzle)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Buffalo Chicken: In a bowl, mix the shredded chicken with the buffalo sauce and cream cheese. Stir until the chicken is coated evenly and the cream cheese is fully incorporated. Set aside.
  3. Prepare the Lasagna Noodles: Boil the lasagna noodles according to the package directions. Once cooked, drain and set aside.
  4. Prepare the Ricotta Mixture: In a large bowl, combine the ricotta cheese, egg, garlic powder, onion powder, oregano, salt, and pepper. Mix well.
  5. Assemble the Lasagna:
    • Spread a thin layer of the ricotta mixture in the bottom of a 9×13 inch baking dish.
    • Layer 3 lasagna noodles over the ricotta mixture.
    • Spread half of the buffalo chicken mixture on top of the noodles.
    • Add a third of the mozzarella and cheddar cheese mixture.
    • Repeat the layers with the ricotta mixture, noodles, buffalo chicken, and cheese until all ingredients are used up.
    • Top the lasagna with the remaining mozzarella, cheddar, and Parmesan cheese.
  6. Bake the Lasagna: Cover the baking dish with foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
  7. Prepare the Ranch Drizzle: While the lasagna is baking, combine the ranch dressing and buffalo sauce in a small bowl. Stir to combine.
  8. Serve: Once the lasagna is done, let it sit for about 5 minutes before slicing. Drizzle the ranch buffalo sauce over the lasagna before serving.

Tips:

  • You can add some chopped green onions or crumbled blue cheese on top for extra flavor.
  • If you prefer a less spicy lasagna, use a mild buffalo sauce or adjust the amount to taste.
  • This dish can be made ahead of time and stored in the refrigerator for up to 2 days before baking.
