Cheesy Beef & Rice Burrito

Here’s a delicious recipe for Cheesy Beef & Rice Burritos that you can easily make at home:

Ingredients:

For the Beef:

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade seasoning: chili powder, cumin, paprika, garlic powder, onion powder, and salt)
  • 1/2 cup water

For the Rice:

  • 1 cup cooked white or brown rice (you can use leftover rice for convenience)
  • 1 tablespoon butter or olive oil
  • 1 teaspoon lime juice (optional)
  • 1/4 cup chopped fresh cilantro (optional)

For the Burrito Assembly:

  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese (or a Mexican cheese blend)
  • 1/2 cup sour cream (optional)
  • 1/4 cup salsa (optional)
  • 1/2 cup shredded lettuce (optional)
  • 1/4 cup diced tomatoes (optional)
  • Sliced jalapeños or pickled jalapeños (optional)

Instructions:

Step 1: Cook the Beef

  1. In a large skillet, heat a bit of oil over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned (about 5-7 minutes).
  2. Drain excess grease if needed. Add the chopped onion and garlic, and cook for 2-3 minutes until softened.
  3. Stir in the taco seasoning and 1/2 cup water. Let it simmer for about 5 minutes until the sauce thickens and the flavors meld. Remove from heat.

Step 2: Prepare the Rice

  1. In a small skillet, heat the butter or olive oil over medium heat. Add the cooked rice and stir to heat through.
  2. Add lime juice and chopped cilantro for extra flavor (this is optional but adds a nice fresh kick!).

Step 3: Assemble the Burritos

  1. Warm the flour tortillas in a dry skillet or microwave for a few seconds to make them pliable.
  2. Place a generous scoop of the seasoned beef mixture in the center of each tortilla.
  3. Add a spoonful of the seasoned rice on top of the beef.
  4. Sprinkle a generous amount of shredded cheese on top of the rice.
  5. Optional: Add sour cream, salsa, lettuce, diced tomatoes, or jalapeños if desired.

Step 4: Fold and Roll the Burritos

  1. Fold in the sides of the tortilla over the filling, then carefully roll up the burrito from the bottom to seal it. Make sure the edges are tucked in.
  2. Repeat with the remaining tortillas and filling.

Step 5: Serve

  1. Slice the burritos in half or serve whole, with extra sour cream or salsa on the side.
