Here’s a delicious recipe for Cheesesteak Nachos with Queso Dip:

Cheesesteak Nachos with Queso Dip

Ingredients:

For the Nachos:

  • 1 lb (450g) ribeye steak, thinly sliced
  • 1 tbsp olive oil
  • 1 large onion, thinly sliced
  • 1 large bell pepper, thinly sliced (any color)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 bag of tortilla chips
  • 1 cup shredded provolone cheese

For the Queso Dip:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • 1/4 tsp cayenne pepper (optional, for a bit of heat)
  • Salt to taste

Toppings:

  • Sliced jalapeños
  • Diced tomatoes
  • Sliced black olives
  • Chopped fresh cilantro
  • Sour cream

Instructions:

  1. Prepare the Steak:
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the sliced ribeye steak and cook until browned, about 3-4 minutes.
    • Remove the steak from the skillet and set aside.
  2. Cook the Vegetables:
    • In the same skillet, add the sliced onions and bell peppers. Cook until they are soft and slightly caramelized, about 5-7 minutes.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
    • Season with salt and pepper to taste.
    • Return the steak to the skillet and mix with the vegetables. Remove from heat.
  3. Prepare the Queso Dip:
    • In a medium saucepan, melt the butter over medium heat.
    • Whisk in the flour and cook for 1-2 minutes until lightly browned.
    • Gradually whisk in the milk and cook until the mixture thickens, about 3-5 minutes.
    • Reduce heat to low and slowly add the shredded cheddar and Monterey Jack cheeses, stirring until melted and smooth.
    • Stir in the garlic powder, onion powder, paprika, cayenne pepper (if using), and salt to taste.
  4. Assemble the Nachos:
    • Preheat your oven to 350°F (175°C).
    • Spread a layer of tortilla chips on a large baking sheet or oven-safe platter.
    • Evenly distribute the steak and vegetable mixture over the chips.
    • Sprinkle the shredded provolone cheese over the top.
    • Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  5. Serve:
    • Remove the nachos from the oven and drizzle with the warm queso dip.
    • Add your desired toppings such as sliced jalapeños, diced tomatoes, sliced black olives, and chopped fresh cilantro.
    • Serve with a side of sour cream for dipping.
