Here’s a decadent recipe for Cheesecake Stuffed Chocolate Chip Cookies — gooey chocolate chip cookies with a creamy cheesecake surprise inside!


🍪 Cheesecake Stuffed Chocolate Chip Cookies

Ingredients

For the Cheesecake Filling:

  • 8 oz (225g) cream cheese, softened

  • 1/3 cup powdered sugar

  • 1 tsp vanilla extract

For the Cookie Dough:

  • 1 cup (226g) unsalted butter, softened

  • 3/4 cup brown sugar

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1 tbsp vanilla extract

  • 2 3/4 cups all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 2 cups semi-sweet chocolate chips


🧁 Instructions

1. Prepare Cheesecake Filling

  • In a bowl, mix cream cheese, powdered sugar, and vanilla until smooth.

  • Scoop into 1–inch mounds (about 1 tbsp each) onto a parchment-lined tray.

  • Freeze for at least 30 minutes, until firm.

2. Make the Cookie Dough

  • In a large bowl, beat butter, brown sugar, and granulated sugar until creamy.

  • Add eggs and vanilla; mix well.

  • Stir in flour, baking soda, and salt until just combined.

  • Fold in chocolate chips.

3. Assemble Cookies

  • Scoop about 2 tbsp of cookie dough. Flatten slightly in your hand.

  • Place a frozen cheesecake ball in the center.

  • Top with another tablespoon of dough and seal edges completely.

  • Roll into a ball and place on a lined baking sheet. Chill for 20–30 minutes.

4. Bake

  • Preheat oven to 350°F (175°C).

  • Bake cookies for 12–14 minutes, or until edges are golden.

  • Let cool slightly before enjoying the molten center!
