Here’s a simple recipe for Cheese-Stuffed Savory Muffins that will give you delicious, fluffy muffins with a cheesy surprise inside. Perfect for breakfast, a snack, or a savory treat!

Ingredients:

  • For the Muffin Batter:
    • 1 ½ cups all-purpose flour
    • 1 tbsp baking powder
    • ½ tsp salt
    • 1 tsp garlic powder (optional)
    • 1 tsp dried herbs (like oregano, thyme, or rosemary)
    • 1 large egg
    • ¾ cup milk
    • ¼ cup olive oil or melted butter
    • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • For the Cheese Filling:
    • ½ cup cream cheese, softened (or you can use ricotta or goat cheese for a different flavor)
    • 1/2 cup shredded cheese (cheddar or any cheese you prefer)
    • 1 tbsp fresh herbs (optional, such as chives, parsley, or dill)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin or line with paper liners.
  2. Prepare the Muffin Batter:
    • In a large mixing bowl, whisk together the flour, baking powder, salt, garlic powder, and dried herbs.
    • In another bowl, beat the egg and then add the milk and olive oil (or melted butter). Mix until well combined.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
    • Fold in the shredded cheese.
  3. Prepare the Cheese Filling:
    • In a small bowl, combine the softened cream cheese, shredded cheese, and fresh herbs (if using). Mix until smooth.
  4. Assemble the Muffins:
    • Spoon a small amount of muffin batter into the bottom of each muffin cup, just enough to cover the bottom.
    • Place a spoonful of the cheese filling in the center of each muffin.
    • Top with more muffin batter until the muffin cups are filled about 2/3 full.
  5. Bake the Muffins:
    • Bake for 18-22 minutes, or until a toothpick inserted into the muffin comes out clean (except for some melted cheese). The tops should be golden and firm.
  6. Cool and Serve:
    • Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack.
    • Serve warm or at room temperature. Enjoy your cheesy, savory muffins!

These muffins can be stored in an airtight container at room temperature for 2-3 days, or you can freeze them for later use. Simply reheat in the microwave or oven before serving.
