Ingredients:

For the kabab mixture:

  • 200g minced chicken or mutton (you can also use paneer for a vegetarian version)
  • 1/2 cup grated cheese (preferably mozzarella or cheddar)
  • 2 tablespoons breadcrumbs (optional, to bind)
  • 1 medium-sized onion, finely chopped
  • 1-2 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon garam masala powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander leaves, finely chopped
  • 1 egg (optional, for binding)

For the coating:

  • 2-3 tablespoons all-purpose flour (maida)
  • Water (to make a smooth batter for coating)
  • Oil or ghee for shallow frying

Instructions:

1. Prepare the Kabab Mixture:

  • In a large mixing bowl, add the minced chicken (or paneer for vegetarian) and combine with grated cheese, chopped onion, green chilies, ginger-garlic paste, and all the dry spices (garam masala, cumin powder, red chili powder, turmeric powder, and salt).
  • Add fresh coriander leaves and mix everything well. If the mixture feels too loose, you can add breadcrumbs or an egg to help bind the ingredients.
  • Once the mixture is thoroughly mixed, refrigerate it for about 30 minutes to firm up. This step helps in shaping the kababs more easily.

2. Shape the Kababs:

  • After the mixture is chilled, take small portions of the mixture and shape them into round balls or oval shapes (about the size of a golf ball).
  • Gently press each ball into a flat, round patty.
  • If you’d like, you can press a little extra cheese in the center of each patty to create a gooey cheese center.

3. Prepare the Coating:

  • In a separate bowl, make a smooth batter using all-purpose flour and a little water. It should be thin enough to coat the kababs but not too runny.
  • Heat oil or ghee in a shallow frying pan over medium heat.

4. Fry the Kababs:

  • Dip each shaped kabab into the flour batter and coat it evenly.
  • Carefully place the coated kababs in the hot oil.
  • Fry them until golden and crispy on all sides, which should take about 4-5 minutes per side. Do not overcrowd the pan; fry in batches if needed.

5. Serve:

  • Once the kababs are cooked, remove them from the oil and drain them on a paper towel to remove excess oil.
  • Serve the Cheese Gola Kababs hot with mint chutney, ketchup, or a side of salad.

Tips:

  • You can experiment with different types of cheese, like mozzarella for a stretchy texture or cheddar for a sharp flavor.
  • For a spicier kick, add some red chili flakes or green chili paste to the mixture.
  • If you’re making a vegetarian version, replace the meat with crumbled paneer or mashed potatoes for a different texture.
