Cheese chicken enchiladas are a delicious and satisfying dish with a combination of tender chicken, flavorful spices, and melted cheese, all wrapped in corn tortillas and topped with a savory enchilada sauce. Here’s a basic recipe for you to try:

Ingredients:

For the Filling:

  • 2 cups cooked and shredded chicken (rotisserie chicken works well)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers (any color)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

For the Enchilada Sauce:

  • 2 tablespoons vegetable oil
  • 2 tablespoons all-purpose flour
  • 2 tablespoons chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 2 cups chicken broth
  • Salt to taste

For Assembly:

  • Corn tortillas
  • Additional shredded cheese for topping
  • Chopped fresh cilantro and sliced green onions for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the shredded chicken, shredded cheese, diced onions, diced bell peppers, ground cumin, chili powder, salt, and pepper. This will be your filling.
  3. In a medium saucepan, heat the vegetable oil over medium heat. Stir in the flour and cook for about 1-2 minutes to create a roux.
  4. Add the chili powder, ground cumin, garlic powder, and dried oregano to the roux. Stir well to combine.
  5. Gradually whisk in the chicken broth to the spice mixture, ensuring there are no lumps. Cook the sauce over medium heat until it thickens, stirring frequently. Add salt to taste.
  6. Take a tortilla, spoon some of the chicken filling onto it, roll it up, and place it seam side down in a baking dish. Repeat with the remaining tortillas and filling.
  7. Pour the enchilada sauce over the rolled tortillas, making sure they are well-covered.
  8. Sprinkle additional shredded cheese over the top.
  9. Bake in the preheated oven for about 20-25 minutes, or until the enchiladas are heated through, and the cheese is melted and bubbly.
  10. Garnish with chopped cilantro and sliced green onions, if desired.

Serve your cheese chicken enchiladas with sour cream, guacamole, or salsa on the side for a complete and delicious meal. Enjoy!
