CATTLE DRIVE CASSEROLE

Cattle Drive Casserole is a hearty and flavorful dish typically made with ground beef, beans, cornbread, cheese, and various seasonings. It’s a classic comfort food often enjoyed in the American South and Southwest. Here’s a basic recipe:

Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 package cornbread mix
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: sour cream, sliced green onions, chopped cilantro

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until it’s browned and crumbled. Add the chopped onion and bell pepper, and cook until they’re softened.
  3. Stir in the diced tomatoes, kidney beans, and corn. Season with salt and pepper to taste. Let the mixture simmer for about 5-10 minutes, allowing the flavors to meld together.
  4. While the beef mixture is simmering, prepare the cornbread batter according to the package instructions.
  5. Transfer the beef mixture to a greased 9×13-inch baking dish. Spread it out evenly.
  6. Pour the cornbread batter over the beef mixture, spreading it out to cover the entire surface.
  7. Sprinkle the shredded cheddar cheese evenly over the top of the cornbread batter.
  8. Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and cooked through.
  9. Once done, remove the casserole from the oven and let it cool for a few minutes before serving.
  10. Serve hot, garnished with optional toppings like sour cream, sliced green onions, or chopped cilantro if desired.
