Carrot and oatmeal cake without oven

Making a carrot and oatmeal cake without an oven is possible by using a stovetop or a steamer. Here’s a simple recipe for a stovetop carrot and oatmeal cake:

Ingredients:

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup all-purpose flour (or whole wheat flour)
  • 1/4 cup sugar (or honey)
  • 1/4 cup milk
  • 1/4 cup vegetable oil or melted butter
  • 1 egg
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon (optional)
  • A pinch of salt
  • 1/2 tsp vanilla extract (optional)
  • 1/4 cup raisins or nuts (optional)

Instructions:

  1. Prepare the oats:
    • If you’re using whole rolled oats, pulse them in a blender or food processor to make a coarse oat flour. If you’re using instant oats, you can skip this step.
  2. Mix the wet ingredients:
    • In a bowl, whisk together the milk, oil or melted butter, egg, and vanilla extract (if using). Add the sugar and mix well until smooth.
  3. Mix the dry ingredients:
    • In another bowl, combine the grated carrots, oats, flour, baking powder, cinnamon (optional), and a pinch of salt. Add the raisins or nuts if you like.
  4. Combine wet and dry ingredients:
    • Gradually add the wet ingredients into the dry ingredients and stir until you get a thick batter.
  5. Prepare the pan:
    • Grease a heavy-bottomed non-stick pan or skillet (you can also use a cake pan). Line the bottom with parchment paper if necessary.
  6. Cook the cake:
    • Heat the pan on low-medium heat. Pour the batter into the pan, spreading it evenly. Cover the pan with a tight-fitting lid.
    • Cook on low heat for about 30-40 minutes, checking occasionally to make sure it doesn’t burn. You can test for doneness by inserting a toothpick into the center; if it comes out clean, the cake is ready.
  7. Cool and serve:
    • Once cooked, let the cake cool down a little before removing it from the pan. Slice and enjoy!

You can also steam the batter in a steamer for around 30-40 minutes if you prefer that method.
