🌮 Carne Guisada with Rice and Fresh Beans

Servings: 4–6

Cook Time: 2 hours (or less in pressure cooker)


🥩 Ingredients

For the Carne Guisada:

  • 2 lbs beef stew meat (chuck or round), cut into 1-inch cubes

  • 2 tbsp oil (vegetable or lard)

  • 1 medium onion, chopped

  • 1 bell pepper, chopped

  • 4 cloves garlic, minced

  • 2 tbsp tomato paste or 1/2 cup tomato sauce

  • 2 cups beef broth

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • 1/2 tsp smoked paprika

  • Salt and pepper to taste

  • Optional: 1 jalapeño, chopped (for heat)

  • 1 tbsp flour (to thicken sauce, optional)

For the Rice:

  • 1½ cups long-grain rice

  • 3 cups water or broth

  • 1 tbsp oil or butter

  • 1 tsp salt

For the Fresh Beans:

  • 2 cups fresh pinto or black beans (or canned, rinsed and drained)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 bay leaf

  • Salt to taste

  • Water or broth to cover

  • Optional: sprinkle of cumin or cilantro to finish


🍳 Instructions

1. Make the Carne Guisada:

  1. Heat oil in a large Dutch oven or pot over medium-high heat.

  2. Brown the beef in batches, then remove and set aside.

  3. In the same pot, sauté onion, bell pepper, and garlic until softened.

  4. Stir in tomato paste, cumin, chili powder, paprika, salt, and pepper.

  5. Add beef back to pot. Pour in beef broth to cover. Bring to a boil.

  6. Reduce to a simmer. Cover and cook for 1½–2 hours, until beef is fork-tender.

    • (Optional: Mix 1 tbsp flour with 2 tbsp water and stir into stew in the last 15 min to thicken.)

2. Cook the Rice:

  1. Rinse rice under cold water.

  2. In a pot, bring water/broth, salt, and oil to a boil.

  3. Stir in rice. Reduce heat, cover, and simmer for 18–20 minutes.

  4. Fluff with fork before serving.

3. Prepare the Beans:

  1. In a pot, sauté onion and garlic in oil until translucent.

  2. Add fresh or canned beans, bay leaf, and enough water/broth to cover.

  3. Simmer until tender and flavorful (20–30 min for canned, longer if fresh).

  4. Season with salt and optional spices to taste.
