cajun shrimp scampi

Cajun shrimp scampi is a flavorful and spicy twist on the classic shrimp scampi dish. Here’s a simple recipe for Cajun shrimp scampi:

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 8 oz linguine or spaghetti
  • 4 tablespoons unsalted butter
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Cajun seasoning (adjust to taste)
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup chicken broth
  • 1/4 cup white wine (optional)
  • Juice of 1 lemon
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant but not browned.
  4. Add the Cajun seasoning and red pepper flakes to the garlic, stirring to combine.
  5. Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Season with salt and black pepper.
  6. Remove the shrimp from the skillet and set aside.
  7. In the same skillet, add the remaining 2 tablespoons of butter and 2 tablespoons of olive oil.
  8. Pour in the chicken broth and white wine (if using), stirring to combine. Allow the mixture to simmer for 2-3 minutes.
  9. Return the cooked shrimp to the skillet and add the cooked pasta. Toss everything together to coat the pasta and shrimp with the sauce.
  10. Squeeze the lemon juice over the dish and toss again. Adjust seasoning if needed.
  11. Garnish with chopped fresh parsley before serving.
  12. Serve the Cajun shrimp scampi hot, and enjoy your delicious and spicy twist on a classic dish!
