Cajun Shrimp Loaded Baked Potato

A Cajun shrimp loaded baked potato sounds absolutely delicious! Here’s a simple recipe to get you started:

Ingredients:

  • 4 large baking potatoes
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 4 tablespoons butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes clean and pierce each one several times with a fork. Place them on a baking sheet and bake for about 45-60 minutes, or until they are tender when pierced with a fork.
  3. While the potatoes are baking, season the shrimp with Cajun seasoning, salt, and pepper.
  4. In a large skillet, melt the butter over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side, until they are pink and opaque. Remove from heat and set aside.
  5. Once the potatoes are done, remove them from the oven and let them cool slightly. Cut a slit in the top of each potato and carefully squeeze the ends to open them up.
  6. Fluff the insides of the potatoes with a fork. Then, top each potato with a portion of the cooked shrimp.
  7. Sprinkle shredded cheddar cheese over the shrimp-topped potatoes.
  8. Place the loaded potatoes back in the oven for a few minutes, just until the cheese is melted and bubbly.
  9. Remove the potatoes from the oven and top each one with a dollop of sour cream and a sprinkle of chopped green onions.
  10. Serve immediately and enjoy your Cajun shrimp loaded baked potatoes!
