Cajun Cabbage Jambalaya

Cajun Cabbage Jambalaya is a flavorful dish that combines elements of traditional jambalaya with the addition of cabbage, which adds a unique texture and flavor profile. Here’s a simple recipe to try:

Ingredients:

  • 1 lb Andouille sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 small head of cabbage, thinly sliced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)
  • Hot sauce (optional, for serving)

Instructions:

  1. Heat a large skillet or Dutch oven over medium-high heat. Add the sliced Andouille sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  2. In the same skillet, add the chopped onion, bell pepper, and celery. Cook until the vegetables are softened, about 5 minutes.
  3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes, until fragrant.
  4. Stir in the thinly sliced cabbage and cook until wilted, about 5 minutes.
  5. Add the diced tomatoes (with their juices) to the skillet, along with the cooked sausage, rice, chicken broth, and Cajun seasoning. Stir well to combine.
  6. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 20-25 minutes, or until the rice is tender and most of the liquid has been absorbed.
  7. Season with salt and pepper to taste.
  8. Serve the Cajun Cabbage Jambalaya hot, garnished with chopped green onions. Offer hot sauce on the side for those who prefer an extra kick.
