Certainly! Here’s a recipe for Caesar salad with asparagus:

Ingredients:

For the salad:

  • 1 bunch of fresh asparagus, trimmed
  • 1 head of romaine lettuce, washed and chopped
  • 1/2 cup of croutons (store-bought or homemade)
  • 1/4 cup of grated Parmesan cheese

For the dressing:

  • 1/4 cup of mayonnaise
  • 2 tablespoons of grated Parmesan cheese
  • 1 tablespoon of Dijon mustard
  • 2 cloves of garlic, minced
  • 2 anchovy fillets (optional), minced
  • 2 tablespoons of fresh lemon juice
  • 1/4 cup of olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your grill to medium-high heat. Toss the trimmed asparagus spears with a drizzle of olive oil, salt, and pepper.
  2. Grill the asparagus for about 5-7 minutes, turning occasionally, until they are tender and have grill marks. Remove from heat and set aside.
  3. In a small bowl, whisk together the mayonnaise, grated Parmesan cheese, Dijon mustard, minced garlic, minced anchovy fillets (if using), and fresh lemon juice until well combined.
  4. Slowly drizzle in the olive oil while whisking continuously until the dressing is smooth and emulsified. Season with salt and pepper to taste.
  5. In a large salad bowl, combine the chopped romaine lettuce, grilled asparagus (cut into bite-sized pieces), croutons, and grated Parmesan cheese.
  6. Pour the Caesar dressing over the salad and toss until everything is evenly coated.
  7. Serve immediately, garnished with additional Parmesan cheese and freshly ground black pepper if desired.
