Here’s a simple and delicious recipe for Buttered Beef Steak:

Ingredients

  • 2 ribeye or sirloin steaks (about 1 inch thick)
  • Salt and black pepper (to taste)
  • 2 tablespoons vegetable oil
  • 4 tablespoons unsalted butter
  • 3-4 cloves garlic (smashed)
  • Fresh herbs (like thyme or rosemary, optional)
  • Lemon wedges (for serving)

Instructions

  1. Prepare the Steaks:
    • Take the steaks out of the refrigerator and let them come to room temperature (about 30 minutes).
    • Pat the steaks dry with paper towels. Season both sides generously with salt and black pepper.
  2. Sear the Steaks:
    • In a large skillet, heat the vegetable oil over medium-high heat until shimmering.
    • Add the steaks to the skillet and cook for about 4-5 minutes on one side until a nice brown crust forms.
    • Flip the steaks and cook for another 3-4 minutes for medium-rare (or longer, depending on your preferred doneness).
  3. Add Butter and Aromatics:
    • Reduce the heat to medium-low. Add the butter, smashed garlic cloves, and herbs (if using) to the skillet.
    • As the butter melts, tilt the skillet and spoon the melted butter over the steaks repeatedly. This will enhance the flavor and help cook the top of the steak.
  4. Rest the Steaks:
    • Remove the steaks from the skillet and place them on a cutting board. Let them rest for about 5-10 minutes to allow the juices to redistribute.
  5. Serve:
    • Slice the steaks against the grain and serve with the buttery garlic sauce from the skillet drizzled over the top. Serve with lemon wedges on the side for a fresh squeeze.
