  • 1 can (14.5 oz) diced tomatoes (or 2 cups fresh tomatoes, chopped)
  • 4 cups chicken or vegetable broth
  • 1 can (15 oz) beans (like cannellini, kidney, or chickpeas), drained and rinsed
  • 1 cup frozen mixed vegetables (peas, corn, green beans)
  • 1 teaspoon dried thyme (or 2 teaspoons fresh)
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Optional: 1 cup pasta (small shapes like elbows or shells) or rice
  • Fresh parsley or grated Parmesan for garnish (optional)

Instructions:

  1. Sauté the aromatics: In a large pot, heat the olive oil (or butter) over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add garlic and cook for another 1-2 minutes until fragrant.
  2. Add the vegetables: Stir in the carrots, celery, and any other veggies you like. Cook for about 5 minutes, stirring occasionally.
  3. Add liquids and seasonings: Pour in the broth, diced tomatoes, beans, frozen vegetables, thyme, oregano, and a pinch of salt and pepper. Bring the soup to a boil.
  4. Simmer: Once boiling, reduce the heat and let it simmer for about 20-30 minutes until the vegetables are tender. If you’re adding pasta or rice, throw it in at this point and cook according to the package directions.
  5. Taste and adjust: Taste the soup and add more salt, pepper, or seasonings as needed.
  6. Serve: Ladle the soup into bowls, garnish with fresh parsley or a sprinkle of Parmesan, and enjoy!
