Here’s a flavorful and fresh Bruschetta Chicken Pasta recipe that combines the vibrant taste of bruschetta with hearty pasta and grilled chicken. It’s easy to make and perfect for a weeknight dinner or a summer gathering.


๐Ÿ Bruschetta Chicken Pasta Recipe

Ingredients:

For the Chicken:

  • 2 boneless skinless chicken breasts

  • 1 tbsp olive oil

  • 1 tsp Italian seasoning

  • 1/2 tsp garlic powder

  • Salt & pepper to taste

For the Pasta & Bruschetta Topping:

  • 12 oz pasta (penne, spaghetti, or your choice)

  • 4 medium ripe tomatoes, diced

  • 3 garlic cloves, minced

  • 1/4 cup red onion, finely diced (optional)

  • 1/4 cup fresh basil, chopped

  • 2 tbsp balsamic vinegar

  • 2 tbsp olive oil

  • Salt & pepper to taste

  • 1/2 cup grated Parmesan cheese (optional)

  • Balsamic glaze for drizzling (optional)


Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil. Cook the pasta according to package directions. Drain and set aside.

  2. Prepare the Chicken:

    • Pound the chicken breasts to even thickness. Season both sides with olive oil, Italian seasoning, garlic powder, salt, and pepper.

    • Grill or sear in a skillet over medium heat for 5โ€“6 minutes per side or until fully cooked. Let rest, then slice thinly.

  3. Make the Bruschetta Topping:

    • In a medium bowl, combine diced tomatoes, minced garlic, red onion (if using), basil, balsamic vinegar, olive oil, salt, and pepper. Let sit for 5โ€“10 minutes to marinate.

  4. Assemble the Dish:

    • In a large bowl or directly in the pasta pot, toss the cooked pasta with the bruschetta mixture.

    • Top with sliced chicken.

    • Sprinkle with Parmesan cheese and drizzle with balsamic glaze if desired.

  5. Serve:

    • Serve warm or at room temperature. Garnish with extra fresh basil or cheese.
