BRUSCHETTA CHICKEN

Bruschetta Chicken is a delicious and flavorful dish that combines juicy grilled chicken breasts with fresh tomato bruschetta topping. Here’s a simple recipe to make it:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 2 cups cherry tomatoes, diced
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup shredded mozzarella cheese
  • Balsamic glaze (for drizzling, optional)
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Preheat your grill to medium-high heat.
  2. Brush the chicken breasts with olive oil and season generously with salt and pepper.
  3. Place the chicken breasts on the grill and cook for about 6-7 minutes per side, or until they are cooked through and no longer pink in the center. The cooking time may vary depending on the thickness of the chicken breasts.
  4. While the chicken is grilling, prepare the bruschetta topping. In a medium bowl, combine the diced cherry tomatoes, minced garlic, chopped basil leaves, balsamic vinegar, extra virgin olive oil, and red pepper flakes (if using). Season with salt and pepper to taste and toss to combine.
  5. Once the chicken is cooked, remove it from the grill and transfer it to a serving platter or individual plates.
  6. Spoon the bruschetta topping over the grilled chicken breasts, dividing it evenly among them.
  7. Sprinkle shredded mozzarella cheese over the top of each chicken breast.
  8. If desired, drizzle balsamic glaze over the chicken breasts for extra flavor.
  9. Garnish with fresh basil leaves, if desired, and serve immediately.
