Brownie Cupcake Cheesecakes combine two delicious desserts—brownies and cheesecake—into one indulgent treat. They’re a fun way to enjoy the rich flavors of a brownie and a creamy cheesecake, all in one convenient cupcake form. Here’s a simple recipe to make them:

Ingredients:

For the Brownie Base:

  • 1/2 cup (1 stick) unsalted butter
  • 8 oz semi-sweet chocolate, chopped
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup sour cream

Directions:

  1. Preheat the oven: Preheat to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Make the brownie base:
    • In a saucepan, melt the butter and chopped chocolate together over medium heat, stirring constantly until smooth. Let it cool slightly.
    • Stir the sugar into the melted chocolate mixture, followed by the eggs and vanilla. Mix until smooth.
    • Add the flour and salt and stir until combined.
    • Spoon the brownie batter into the cupcake liners, filling each about halfway.
  3. Make the cheesecake filling:
    • In a mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
    • Add the vanilla and egg, and mix until fully incorporated.
    • Stir in the sour cream until smooth.
  4. Assemble the cupcakes:
    • Spoon the cheesecake filling on top of the brownie batter in each cupcake liner, filling it almost to the top.
    • Use a toothpick or knife to gently swirl the cheesecake filling into the brownie batter for a marbled effect.
  5. Bake:
    • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the brownie comes out clean (it’s okay if a little cheesecake sticks to the toothpick).
    • Let the cupcakes cool in the tin for 10 minutes, then transfer them to a wire rack to cool completely.
  6. Serve:
    • Enjoy the Brownie Cupcake Cheesecakes as is, or top with whipped cream, fresh berries, or chocolate ganache for extra indulgence.

Tips:

  • Make sure the cream cheese is softened to avoid lumps in the filling.
