Ingredients:

  • 4 cups broccoli florets, chopped into bite-sized pieces
  • 2 medium apples, diced (choose your favorite variety)
  • 1/2 cup red onion, finely chopped
  • 1/2 cup raisins or dried cranberries
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons honey (adjust to taste)
  • 2 tablespoons apple cider vinegar
  • Salt and black pepper to taste

Instructions:

  1. Prepare the Dressing:
    • In a small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, salt, and black pepper until well combined. Adjust the sweetness or tanginess according to your taste preferences. Set aside.
  2. Prepare the Salad:
    • In a large mixing bowl, combine the chopped broccoli florets, diced apples, finely chopped red onion, raisins or dried cranberries, and chopped nuts.
  3. Combine Dressing and Salad:
    • Pour the prepared dressing over the salad ingredients in the mixing bowl. Gently toss until all the ingredients are evenly coated with the dressing.
  4. Chill and Serve:
    • Cover the bowl with plastic wrap or transfer the salad to a sealed container. Refrigerate for at least 30 minutes to allow the flavors to meld together and the salad to chill.
