Bok Choy and Shrimp

Here’s a simple and delicious recipe for Bok Choy and Shrimp Stir-Fry:

Ingredients:

  • 1 lb (450g) shrimp, peeled and deveined
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 bunch bok choy, chopped
  • 1 red bell pepper, sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch (optional, for thickening)
  • Salt and pepper, to taste
  • Cooked rice, for serving

Instructions:

  1. Prepare the shrimp:
    • Rinse the shrimp and pat dry with paper towels. Season with a pinch of salt and pepper.
  2. Make the sauce:
    • In a small bowl, mix soy sauce, oyster sauce, rice vinegar, and sesame oil. If you want a thicker sauce, dissolve 1 tsp of cornstarch in 1 tbsp of water and add to the sauce mixture.
  3. Cook the shrimp:
    • Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
  4. Stir-fry vegetables:
    • In the same skillet, add the remaining 1 tbsp of vegetable oil. Add garlic and ginger, and sauté for about 30 seconds until fragrant.
    • Add the bok choy and red bell pepper. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
  5. Combine and finish:
    • Return the cooked shrimp to the skillet. Pour in the sauce mixture and stir well to coat everything evenly. Cook for another 1-2 minutes until the sauce thickens slightly and everything is heated through.
  6. Serve:
    • Serve the bok choy and shrimp stir-fry over cooked rice. Enjoy!

Tips:

  • You can add other vegetables like snow peas, carrots, or mushrooms for extra flavor and nutrition.
  • Adjust the seasoning to taste. If you prefer it spicier, add a pinch of red pepper flakes or a dash of hot sauce.
