Here’s a simple and delicious recipe for Bok Choy and Shrimp Stir-Fry:
Ingredients:
- 1 lb (450g) shrimp, peeled and deveined
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 bunch bok choy, chopped
- 1 red bell pepper, sliced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp cornstarch (optional, for thickening)
- Salt and pepper, to taste
- Cooked rice, for serving
Instructions:
- Prepare the shrimp:
- Rinse the shrimp and pat dry with paper towels. Season with a pinch of salt and pepper.
- Make the sauce:
- In a small bowl, mix soy sauce, oyster sauce, rice vinegar, and sesame oil. If you want a thicker sauce, dissolve 1 tsp of cornstarch in 1 tbsp of water and add to the sauce mixture.
- Cook the shrimp:
- Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
- Stir-fry vegetables:
- In the same skillet, add the remaining 1 tbsp of vegetable oil. Add garlic and ginger, and sauté for about 30 seconds until fragrant.
- Add the bok choy and red bell pepper. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
- Combine and finish:
- Return the cooked shrimp to the skillet. Pour in the sauce mixture and stir well to coat everything evenly. Cook for another 1-2 minutes until the sauce thickens slightly and everything is heated through.
- Serve:
- Serve the bok choy and shrimp stir-fry over cooked rice. Enjoy!
Tips:
- You can add other vegetables like snow peas, carrots, or mushrooms for extra flavor and nutrition.
- Adjust the seasoning to taste. If you prefer it spicier, add a pinch of red pepper flakes or a dash of hot sauce.
Enjoy your meal!
