Blueberry Peach Feta Salad

Blueberry Peach Feta Salad Recipe

Ingredients:

  • Salad:
    • 2 cups fresh blueberries
    • 3-4 ripe peaches, sliced
    • 4 cups mixed greens (spinach, arugula, or spring mix)
    • 1/2 cup crumbled feta cheese
    • 1/4 cup sliced almonds or pecans (optional)
  • Dressing:
    • 1/4 cup olive oil
    • 2 tablespoons balsamic vinegar
    • 1 tablespoon honey
    • 1 teaspoon Dijon mustard
    • Salt and pepper to taste

Instructions:

  1. Prepare the Dressing:
    • In a small bowl or a jar with a lid, combine the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
    • Whisk together or shake well to combine. Adjust seasoning to taste.
  2. Assemble the Salad:
    • In a large salad bowl, place the mixed greens.
    • Add the blueberries and peach slices on top of the greens.
    • Sprinkle the crumbled feta cheese over the salad.
    • If using nuts, sprinkle the sliced almonds or pecans on top.
  3. Dress the Salad:
    • Drizzle the dressing over the salad just before serving.
    • Toss gently to combine all the ingredients and ensure the dressing is evenly distributed.
  4. Serve:
    • Serve immediately and enjoy the fresh flavors of this summer salad!

Tips:

  • For a heartier salad: Add grilled chicken, shrimp, or tofu.
  • For extra flavor: Add a handful of fresh mint or basil leaves.
  • Make ahead: Prepare the salad ingredients and dressing separately. Combine just before serving to keep the greens crisp.
