Blueberry muffins

Certainly! Here’s a classic Blueberry Muffin recipe for you:

Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1/3 cup vegetable oil or melted butter
  • 1/3 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh blueberries (you can use frozen, but thaw them first and pat dry)
  • Optional: Lemon zest (from 1 lemon) for added flavor

For the Streusel Topping (optional):

  • ¼ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons cold butter, cut into small pieces

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. If using lemon zest, add it to the dry ingredients and mix well.
  3. In another bowl, whisk together the vegetable oil or melted butter, milk, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and gently fold them together with a spatula. Be careful not to overmix; the batter should be lumpy.
  5. Gently fold in the blueberries. Again, be careful not to overmix to avoid turning the batter purple.
  6. If you’re making the streusel topping, mix the sugar and flour in a small bowl. Cut in the cold butter using a fork or your fingers until the mixture resembles coarse crumbs.
  7. Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full.
  8. If using the streusel topping, sprinkle it evenly over the muffin batter.
  9. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  10. Remove the muffins from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  11. Once cooled, enjoy your delicious homemade blueberry muffins!

These muffins are perfect for breakfast or as a snack. You can also customize them by adding nuts, oats, or other fruits if you like. Enjoy!
