Blackberry Lime Cheesecake Cupcakes

Here’s a recipe for Blackberry Lime Cheesecake Cupcakes:

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted

For the Cheesecake Filling:

  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
  • 2 tablespoons fresh lime juice
  • Zest of 1 lime

For the Blackberry Topping:

  • 1 cup fresh blackberries
  • 2 tablespoons sugar
  • 1 tablespoon fresh lime juice

Instructions:

1. Prepare the Crust:

  • Preheat your oven to 325°F (163°C).
  • Line a muffin tin with paper liners.
  • In a medium bowl, mix together the graham cracker crumbs, sugar, salt, and melted butter. Stir until combined.
  • Spoon about 1 tablespoon of the crumb mixture into each cupcake liner, pressing it down gently to form a crust.
  • Bake for 8-10 minutes, or until the crust is set and lightly golden. Remove from the oven and let cool while you prepare the cheesecake filling.

2. Make the Cheesecake Filling:

  • In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy (about 1-2 minutes).
  • Add the sugar, vanilla extract, lime juice, and lime zest, and mix until combined.
  • Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
  • Add the sour cream and mix until smooth.
  • Spoon the cheesecake filling over the cooled crusts, dividing evenly between the cupcake liners. Fill each about 2/3 of the way full.
  • Bake the cupcakes at 325°F (163°C) for 18-20 minutes, or until the centers are set and a toothpick inserted into the center comes out clean.
  • Allow the cupcakes to cool completely in the pan, then refrigerate for at least 2-3 hours (or overnight) to set.

3. Make the Blackberry Topping:

  • In a small saucepan, combine the blackberries, sugar, and lime juice. Heat over medium heat for about 5 minutes, or until the blackberries break down and release their juices.
  • Mash the berries slightly to create a chunky sauce, and let it simmer for another 2 minutes to thicken.
  • Remove from heat and let it cool to room temperature before spooning over the chilled cheesecake cupcakes.

4. Serve:

  • Once the cupcakes are fully chilled, top each one with a spoonful of the blackberry topping.
  • Optionally, garnish with fresh blackberries or a lime wedge for extra decoration.
