Biscuit Roll Cake

Sure! Here’s a simple recipe for a delicious biscuit roll cake:

Ingredients:

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Powdered sugar (for dusting)
  • Your favorite jam or spread for filling (such as strawberry jam, chocolate spread, or cream cheese frosting)

Instructions:

  1. Preheat oven: Preheat your oven to 350°F (175°C). Line a 10×15 inch (25×38 cm) jelly roll pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Prepare batter: In a large mixing bowl, beat the eggs and granulated sugar together using an electric mixer until pale and fluffy, about 5 minutes. Add vanilla extract and mix until combined.
  3. Combine dry ingredients: In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the egg mixture, gently folding until just combined. Be careful not to overmix to maintain a light and airy texture.
  4. Bake: Pour the batter into the prepared jelly roll pan and spread it evenly with a spatula. Bake in the preheated oven for 10-12 minutes, or until the cake is golden brown and springs back when lightly touched.
  5. Roll: While the cake is still warm, dust the top with powdered sugar. Then, place a clean kitchen towel over the cake and carefully flip it onto the towel. Peel off the parchment paper.
  6. Roll again: Starting from one short end, gently roll the cake and towel together into a tight spiral. Allow the rolled cake to cool completely while wrapped in the towel, this will help it maintain its shape.
  7. Fill: Once the cake has cooled, carefully unroll it and spread your favorite jam or spread evenly over the surface, leaving a small border around the edges.
  8. Re-roll: Starting from the same end as before, carefully re-roll the cake tightly, this time without the towel. Place it seam-side down on a serving platter.
  9. Serve: Dust the top of the cake with more powdered sugar if desired. Slice and serve your delicious biscuit roll cake!
