Beef Tomato Soup

Sure, here’s a simple recipe for beef tomato soup:

Ingredients:

  • 1 lb (450g) beef stew meat, cut into small cubes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until softened and fragrant, about 3-4 minutes.
  2. Add the cubed beef stew meat to the pot and brown on all sides, about 5-7 minutes.
  3. Once the beef is browned, add the diced carrots and celery to the pot. Cook for another 5 minutes, stirring occasionally.
  4. Pour in the diced tomatoes (with their juices) and tomato paste. Stir well to combine.
  5. Add the beef broth to the pot and bring the soup to a simmer. Once simmering, add the dried thyme and oregano. Season with salt and pepper to taste.
  6. Reduce the heat to low, cover the pot, and let the soup simmer for about 1 to 1.5 hours, or until the beef is tender and the flavors have melded together.
  7. Once the soup is ready, taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired.
