Beef & Tomato Macaroni Soup is a hearty and comforting dish, perfect for a cozy meal. Here’s a simple recipe to make this delicious soup:

Ingredients:

  • 1 lb (450g) ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 4 cups beef broth (or water with bouillon cubes)
  • 2 cups elbow macaroni (or any pasta of your choice)
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1/2 cup frozen peas (optional)
  • 1 tablespoon olive oil (for cooking)
  • Fresh parsley (for garnish, optional)

Instructions:

  1. Brown the Beef:
    • In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  2. Sauté the Aromatics:
    • Add the chopped onion and minced garlic to the beef. Cook for 2-3 minutes until softened and fragrant.
  3. Add the Tomatoes:
    • Stir in the diced tomatoes (with their juices) and tomato paste. Mix well.
  4. Add the Broth:
    • Pour in the beef broth, and add the oregano, basil, salt, and pepper. Stir everything together and bring to a simmer.
  5. Cook the Macaroni:
    • Add the elbow macaroni to the soup. Continue simmering for 10-12 minutes, or until the pasta is tender and cooked through. Stir occasionally to prevent the pasta from sticking.
  6. Optional: Add Peas:
    • If using frozen peas, add them in the last few minutes of cooking. Stir to combine.
  7. Taste and Adjust Seasonings:
    • Taste the soup and adjust the seasoning if necessary, adding more salt, pepper, or herbs to your liking.
  8. Serve:
    • Ladle the soup into bowls and garnish with fresh parsley if desired.
