Beef and Rotini in Garlic Parmesan Sauce

Ingredients:

For the pasta & beef:

  • 12 oz rotini pasta

  • 1 lb ground beef (or thinly sliced steak strips)

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • 1 tsp Italian seasoning (optional)

For the sauce:

  • 3 tbsp butter

  • 4–5 garlic cloves, minced

  • 3 tbsp all-purpose flour

  • 2 cups milk (whole milk or half-and-half for creaminess)

  • ¾ cup grated Parmesan cheese

  • ½ tsp salt (adjust to taste)

  • ¼ tsp black pepper

  • Red pepper flakes (optional, for a little heat)

  • 1 tbsp chopped parsley (for garnish)


Instructions:

  1. Cook the pasta:

    • Boil rotini in salted water until al dente. Drain and set aside.

  2. Cook the beef:

    • In a large skillet, heat olive oil over medium-high heat.

    • Add ground beef or steak strips. Season with salt, pepper, and Italian seasoning.

    • Cook until browned and fully cooked. Remove and set aside.

  3. Make the sauce:

    • In the same skillet, reduce heat to medium.

    • Add butter and garlic. Sauté for 1–2 minutes until fragrant (don’t burn it).

    • Stir in flour to make a roux. Cook for 1 minute.

    • Slowly whisk in the milk. Keep whisking to avoid lumps.

    • Simmer for 3–5 minutes until the sauce thickens.

    • Add Parmesan cheese, salt, pepper, and red pepper flakes if using. Stir until melted and smooth.

  4. Combine everything:

    • Add the beef and cooked rotini into the sauce.

    • Toss everything together until coated evenly.

    • Garnish with parsley and a bit more Parmesan.
