BBQ Chicken thighs

BBQ chicken thighs are a delicious and juicy option for a meal, with their tender meat absorbing the smoky flavors of barbecue sauce. Here’s a simple recipe to make BBQ chicken thighs:

Ingredients:

  • 8 bone-in, skin-on chicken thighs
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (optional)
  • 1/2 cup of your favorite BBQ sauce (store-bought or homemade)
  • Fresh herbs (optional, for garnish)

Instructions:

  1. Prep the Chicken:
    • Preheat your grill to medium-high heat (375°F/190°C) if using a gas or charcoal grill. If using the oven, preheat to 400°F (200°C).
    • Pat the chicken thighs dry with paper towels. This will help the skin crisp up while cooking.
    • Rub the thighs with olive oil, then season both sides with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. Grill the Chicken (or Oven Roast):
    • Grill: Place the chicken thighs on the grill skin-side down. Cook for about 5-7 minutes until the skin is crispy and golden brown. Flip the chicken over and reduce the heat to medium. Continue grilling for another 20-25 minutes, until the internal temperature reaches 165°F (75°C).
    • Oven: Arrange the chicken thighs on a baking sheet lined with parchment paper or foil. Roast in the oven for 25-30 minutes, turning once, until the skin is crispy and the internal temperature reaches 165°F (75°C).
  3. Add BBQ Sauce:
    • About 5 minutes before the chicken is done, brush a generous amount of BBQ sauce on the thighs, and let it cook for a few minutes to caramelize.
    • Flip the thighs and brush the other side with sauce. Cook for another 3-5 minutes, ensuring the sauce doesn’t burn.
  4. Rest and Serve:
    • Remove the chicken thighs from the grill or oven and let them rest for 5-10 minutes before serving.
    • Garnish with fresh herbs like parsley or cilantro, if desired.

Serving Suggestions:

  • Serve the BBQ chicken thighs with sides like coleslaw, roasted vegetables, cornbread, or mashed potatoes. They also go great with grilled corn on the cob.
