Banana Foster Pudding

Here’s a delicious recipe for Banana Foster Pudding:

Ingredients

For the Pudding:

  • 1 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 4 cups whole milk
  • 4 large egg yolks, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter

For the Banana Foster Topping:

  • 4 ripe bananas, sliced
  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup dark rum (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

To Assemble:

  • Vanilla wafers or graham crackers (optional)
  • Whipped cream for serving

Instructions

Make the Pudding:

  1. In a medium saucepan, whisk together sugar, cornstarch, and salt.
  2. Gradually add milk, whisking to combine.
  3. Cook over medium heat, stirring constantly, until the mixture thickens and starts to bubble (about 10 minutes).
  4. Remove from heat. Stir a small amount of the hot mixture into the beaten egg yolks, then return the egg mixture to the saucepan, whisking continuously.
  5. Cook for another 2-3 minutes until thickened. Remove from heat and stir in vanilla and butter. Let it cool slightly.

Make the Banana Foster Topping:

  1. In a skillet, melt butter over medium heat. Add brown sugar and stir until dissolved.
  2. Add sliced bananas, and cook for 2-3 minutes until softened.
  3. If using, carefully add rum and allow it to flame (optional). Cook for an additional minute. Stir in vanilla and cinnamon.

Assemble the Pudding:

  1. In serving dishes, layer pudding, followed by banana foster topping, and repeat.
  2. If desired, add a layer of vanilla wafers or graham crackers.
  3. Chill in the refrigerator for at least 1 hour before serving.

Serve:

Top with whipped cream before serving. Enjoy your Banana Foster Pudding!
