Here’s a simple recipe for Banana and Apple Oat Cookies that’s both delicious and healthy!
Ingredients:
- 1 ripe banana, mashed
- 1/2 cup applesauce (or 1 small apple, finely grated)
- 1 cup rolled oats
- 1/2 cup whole wheat flour (or any flour of your choice)
- 1/4 cup raisins or any dried fruit (optional)
- 1/4 cup chopped nuts (walnuts or almonds work great, optional)
- 1/2 tsp cinnamon
- 1/4 tsp vanilla extract
- 1/4 tsp salt
- 1/4 tsp baking powder (optional, for slightly puffier cookies)
- 2 tbsp honey or maple syrup (optional, for sweetness)
Instructions:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, mash the ripe banana until smooth. If you’re using a grated apple instead of applesauce, grate it finely and add it to the mashed banana.
- Add the applesauce (if using), vanilla extract, and honey/maple syrup (if using) to the banana mixture. Stir to combine.
- Stir in the rolled oats, whole wheat flour, cinnamon, salt, and baking powder. Mix until everything is well combined.
- Add any optional mix-ins like raisins, dried fruit, or nuts.
- Using a spoon, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 1 inch apart. Flatten each cookie slightly with the back of the spoon.
- Bake for about 12-15 minutes or until the cookies are golden brown on the edges.
- Cool on a wire rack before serving.
