baked oatmeal cups

These are healthy, baked oatmeal cups that are portable and can be customized with your favorite fruits and nuts.

Ingredients:

  • 2 cups rolled oats
  • 1 1/2 cups milk (or any milk substitute)
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • Fresh fruit or nuts for topping (e.g., berries, banana slices, almonds)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine oats, milk, egg, sweetener, vanilla, cinnamon, and baking powder.
  3. Stir until mixed and pour into a greased muffin tin, filling each cup about 2/3 full.
  4. Add fruit or nuts on top of each cup.
  5. Bake for 20-25 minutes, until golden and set.
  6. Let cool slightly before serving.

3. Breakfast Hash Cups

These savory cups are made with diced potatoes, eggs, and other breakfast ingredients like bacon, sausage, or veggies.

Ingredients:

  • 2 cups diced potatoes (small cubes)
  • 1 cup cooked breakfast sausage or bacon, crumbled
  • 4 eggs
  • 1/2 cup shredded cheese
  • Salt and pepper to taste
  • Fresh herbs like parsley or chives for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Sauté diced potatoes in a skillet with a little oil until they’re golden and cooked through.
  3. Grease a muffin tin and layer the cooked potatoes at the bottom.
  4. Add crumbled sausage or bacon on top.
  5. Crack an egg into each muffin cup.
  6. Sprinkle cheese on top and season with salt and pepper.
  7. Bake for 15-20 minutes until eggs are set.
  8. Garnish with fresh herbs before serving.
