Here’s a simple and delicious recipe for baked chicken with bell peppers:

Baked Chicken with Bell Peppers

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 bell peppers (any color), sliced
  • 1 onion, sliced (optional)
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)
  • Lemon wedges (optional, for serving)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Chicken:
    • In a large bowl, combine olive oil, garlic powder, paprika, oregano, salt, and pepper.
    • Add the chicken breasts to the bowl and coat them well with the marinade.
  3. Arrange Vegetables:
    • In a baking dish, spread the sliced bell peppers and onion (if using) evenly.
  4. Add Chicken:
    • Place the marinated chicken breasts on top of the vegetables.
  5. Bake:
    • Cover the baking dish with aluminum foil and bake for about 25-30 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C) and the vegetables are tender.
  6. Serve:
    • Garnish with fresh parsley and serve with lemon wedges if desired.

Tips:

  • Feel free to add other vegetables like zucchini or mushrooms for extra flavor and nutrition.
  • You can also marinate the chicken for a few hours or overnight for more flavor.
