Ingredients:
- 2 cups sushi rice
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 2 ripe avocados, sliced
- 1 cucumber, julienned
- 1/2 cup imitation crab or cooked crab meat, shredded
- 2 tablespoons black sesame seeds
- Nori sheets (seaweed), cut into thin strips

Instructions:
- Cook the sushi rice according to package instructions. Once cooked, transfer the rice to a large bowl.
- In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until the sugar and salt dissolve. Pour the mixture over the cooked rice and gently fold it in to combine. Let the rice cool to room temperature.
- Line the bottom of a round cake mold or springform pan with plastic wrap.

- Add a layer of julienned cucumber on top of the avocado.

- Place a plate on top of the mold and flip it over to unmold the sushi cake onto the plate.
- Carefully remove the mold and plastic wrap.
- Sprinkle black sesame seeds over the top of the sushi cake and garnish with nori strips.
