Ingredients (Makes 2 sandwiches):

4 slices of sourdough bread (or bread of choice)

1 ripe avocado, sliced or mashed

1 large tomato, sliced

4–6 slices of fresh mozzarella cheese

2 tbsp butter or olive oil (for toasting)

Salt & pepper to taste

Prep the ingredients:

Slice the tomato and mozzarella.

Pit and slice or mash the avocado.

Season avocado with a pinch of salt and pepper if desired.

Lay out 2 slices of bread.
