🥑 Avocado Chicken Salad Lettuce Wraps

Ingredients:

  • 2 cups cooked chicken, shredded or chopped (rotisserie chicken works great)

  • 1 ripe avocado, mashed

  • 2–3 tablespoons plain Greek yogurt or mayonnaise (optional, for creaminess)

  • 1 tablespoon lime juice

  • 1–2 green onions, finely chopped

  • 1 celery stalk, diced

  • 1/4 cup cilantro or parsley, chopped (optional)

  • Salt and pepper, to taste

  • 1/2 teaspoon garlic powder

  • Butter lettuce leaves, romaine, or iceberg for wrapping

Optional Add-Ins:

  • Diced tomatoes

  • Diced red onion

  • Crumbled bacon

  • Jalapeños for a kick

  • Everything bagel seasoning for extra flavor


Instructions:

  1. Mash the avocado in a large bowl until mostly smooth.

  2. Add in the Greek yogurt or mayo, lime juice, and season with salt, pepper, and garlic powder.

  3. Stir in the shredded chicken, green onion, celery, and cilantro (if using).

  4. Mix everything until well combined. Taste and adjust seasoning.

  5. Spoon the mixture into washed and dried lettuce leaves.

  6. Serve immediately, or chill for 15–30 minutes to allow flavors to meld.


Tips:

  • Use pre-cooked chicken to save time — rotisserie or meal-prep chicken is ideal.

  • Make it ahead of time and store in an airtight container for up to 2 days.

  • Want crunch? Top with sliced almonds or sunflower seeds before serving.
