Ingredients:

  • Mixed salad greens (such as arugula, spinach, and romaine)
  • 1 cup of chopped butternut squash, roasted
  • 1/2 cup of pecans or walnuts, toasted
  • 1/2 cup of dried cranberries
  • 1 apple, thinly sliced
  • 1/4 cup of crumbled feta or goat cheese
  • Balsamic vinaigrette dressing

Instructions:

  1. Roast the Butternut Squash:
    • Preheat your oven to 400°F (200°C).
    • Peel and cube the butternut squash.
    • Toss the squash cubes with olive oil, salt, and pepper.
    • Roast in the oven for about 20-25 minutes or until tender and golden.
  2. Toast the Nuts:
    • In a dry pan over medium heat, toast the pecans or walnuts until they become fragrant. Be careful not to burn them.
  3. Prepare the Salad:
    • In a large bowl, combine the mixed salad greens, roasted butternut squash, toasted nuts, dried cranberries, sliced apple, and crumbled cheese.
  4. Dress the Salad:
    • Drizzle the salad with balsamic vinaigrette dressing. You can use a store-bought one or make your own by combining balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper.
  5. Toss and Serve:
    • Gently toss the salad to coat the ingredients evenly with the dressing.
    • Serve immediately and enjoy your delicious autumn salad!
