Ingredients:

For the grilled chicken:

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder

For the Alfredo sauce:

  • 2 cups heavy cream
  • 1 cup grated Asiago cheese
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1/4 cup unsalted butter
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg (optional)

For the tortellini:

  • 1 package (about 20 ounces) cheese tortellini

Optional garnish:

  • Fresh parsley, chopped
  • Additional grated Asiago cheese

Instructions:

  1. Prepare the chicken:
    • Preheat your grill to medium-high heat.
    • Season the chicken breasts with salt, pepper, Italian seasoning, and garlic powder.
    • Drizzle with olive oil and rub the seasonings into the chicken.
    • Grill the chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
    • Remove from the grill and let it rest for a few minutes before slicing it into strips.
  2. Cook the tortellini:
    • Bring a large pot of salted water to a boil.
    • Add the tortellini and cook according to the package instructions until al dente.
    • Drain and set aside.
  3. Make the Alfredo sauce:
    • In a large skillet, melt the butter over medium heat.
    • Add the minced garlic and sauté for about 1-2 minutes until fragrant.
    • Pour in the heavy cream and bring it to a simmer.
    • Reduce the heat to low and gradually stir in the Asiago and Parmesan cheeses until melted and smooth.
    • Season with salt, pepper, and nutmeg (if using) to taste.
    • Let the sauce simmer gently for a few minutes until it thickens slightly.
  4. Combine and serve:
    • Add the cooked tortellini to the Alfredo sauce, stirring gently to coat the pasta evenly.
    • Serve the tortellini Alfredo on plates or in bowls.
    • Top with the sliced grilled chicken.
    • Garnish with fresh parsley and additional grated Asiago cheese if desired.
