Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Make the Crust:
    • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
    • Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan.
    • Bake for 8-10 minutes until lightly golden. Remove from the oven and let it cool.
  3. Prepare the Filling:
    • In a large bowl, whisk together the sugar, lemon juice, lemon zest, and eggs until well combined.
    • Add the sweetened condensed milk and vanilla extract. Mix until smooth and creamy.
  4. Fill the Crust:
    • Pour the lemon filling into the cooled crust, spreading it evenly.
  5. Bake the Pie:
    • Bake in the preheated oven for 15-20 minutes, or until the filling is set but still slightly jiggly in the center.
    • Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours.

    • Once chilled, top with whipped cream if desired and garnish with lemon slices or zest.
